John lamented the missing mixer: "Dark and Stormies are best, but I haven't found a suitable diet ginger beer." Ahh. at last I get to repay your beverage generosity. I have the solution (literally) for you. Few people are aware of the difference between ginger ale and ginger beer. Some think it's alcoholic, but ginger beer is non-alcoholic, just like ginger ale. Some thing it's more ginger, but that's not it either. The answer is: cayenne pepper. (This is a Caribbean beverage, after all!) Check the ingredients on ginger beer and you'll either find mention of a pepper or of capsaicin, which is the compound that gives peppers their heat. Okay, so here we have another typical Alfred digression into more than you wanted to know about a subject. How does this help poor John maintain his trim figure during the winter months? Easy. Next time you're at the store, buy a handful of cayenne or any other flame-throwing peppers that you favor. Cut them up (and include the seeds for maximum impact) and boil them in a small amount of water. Strain off the peppers. At this point, I'd use the liquid to make a simple syrup with sugar, but since John wants to doctor a diet drink, you should be able to leave out the sugar with no ill effects. Now, stir in a spoonful of this elixir into your diet ginger ale, add rum, lime, and ice, and you'll have your low-cal Dark and Stormy quicker than you can say "island time". It may take some sampling to get the amount of pepper juice just right for your taste, but I doubt anyone will complain about having to make these experiments. Alfred, would add one item. The rum is Goslings Black Seal. Also has certain taste characteristics.
