what is the difference between 2/0 AWG and 2 AWG which makes the 2/0 AWG cost about 3 times as much?

These are different sizes #2 and 00 (or 2/0)
00 is about twice the size of #2, 00 has about twice the capacity of #2.

2 AWG is about the size of a pencil
2/0 or "two ought" is about the size of your finger
More copper = $$$$

And if you've hauled some scrap copper to the salvage yard lately,
you'll see why the larger conductors cost more. If you've got some
copper scrap sitting around, this is an opportune moment to turn it into
cash. I had some old plumbing pipe, some old electrical cable, and a
defunct electric motor, a small collection but it was transformed into
two $50 bills the other day. Imagine my surprise.
