Food request

Hey, Cal-list folks,
Two years ago I was burdened with preparing a couple meals for our
voyage up Lake Superior in the schooner. Now it has happened again.
I've got to feed the crew for one dinner.
Somebody gave me a good one-pot recipe using canned chicken. All I
remember is that it had shoe-peg corn and (I think) chick peas in it
(garbanzos). Does anybody remember sending me that? If not, does
anybody have relatively simple one-pot recipes that will feed (or can be
scaled up to feed) about ten folks?

Chris,
One Ensenada Boat I sailed on would make a big pot of homemade pea soup with 2 inch chunks of polish sausage in it. It was served with hard rolls. You would freeze solid to keep the ice box cold.

I am reading emails from the SC50 Deception in the Pacific Cup race.
They are moving so fast that they can only air out the boat for 5 min a couple of times a day. On top of the smell they have developed a leak in the rudder bearings.
Right now they are 2nd in class

I like to make a big one pot meal of Thai Red Curry.
Most of the ingredients will store in a boat, except fresh meat, but this can always be made vegetarian.
Basic recipe uses Thai Red Curry paste (available in a small jar in the grocery), one or more cans of coconut milk, a small amount of thai fish sauce. A little fresh garlic and ginger does not hurt, but is optional.
I throw brown basmati rice in the pot with the above ingredients and let cook.
You can put in any manner of vegetables and some type of meat. Variations are endless and usually depend on what I can get my hands on while out cruising.
Put the veges in as the rice cooks so that they do not overcook, for example, carrots and onions early, because they take longer to cook, and something like asparagus or green beans late in the cooking because they cook fast.
I have made this for big potlucks while cruising with other boats and never had a complaint yet.

Also hard on the holding tank. Try making a pot of stew, freeze in pot (ss) let
thaw in ice box and reheat, bring a good loaf of french bread or rolls. Or a
meatloaf and have sandwiches. both are very hearty. Another easy one is tuna
casserole if fish is ok...boil egg noodles in big pot, drain, add big can of
mushrooms(or fresh), several cans of cream of mushroom soup, can or fresh milk
to liquify, some onion(green or ?) cut up, good amount of cut-up celery, some
italian seasoning, keep heating this, then if you choose, grate in some cheddar
cheese and stir till it melts in. probably some bread or rolls for sides.
all of these are easy, you can even have someone else make the cook-ahead meals.

CHRIS: Under the search mode here at the top of the message block --type in " Chicken noodles " and you should find what you are looking for. I'd pass on the pea soup as well if you are living in close quarters.
