Looks like he did a stretch and blow. He just opened the clutch and gathered the sail . I think the stretch and blow keeps both the sheet and guy locked and pulls in the belly of the sail first. That is the way I was trained and come to find out it is not very common. This guy definately is taking the sail in by cutting the halyard and pulling in on the sheet. I think this is actually a very common way to take a sail down. Stuff it down the companionway hatch in this case into a bag that hangs in the hatch opening. I would do this on my boat except I don't have such a hatch. I think I am wrong on what it a common way. I think cutting the guy and pulling the sail in with the sheet while easing the halyard is more common. That is when you want to control the halyard. Here he cuts the halyard instead of the guy. Cut one, hold one, and pull in on the third.
