Perkins 4.236 Thermostat question

Happy New Year everyone!! I posted a while back on a head gasket job and happy to say I completed that project which also turned into rebuilding to injectors, professionally servicing the heat exchanger and oil cooler, a new water pump, and all new hoses. I had to replace the thermostat about a year ago and I used a 180 degree thermostat. The sender is towards the aft of the engine so what I end up getting is reading that is a hotter temp, up to 200, before the thermostat opens up and then it holds an even 180. It was doing this before I changed the thermostat because I thought the original one was sticking. The alarm is closer to the thermostat. I’m wondering if I should switch out the locations for the alarm and sender for a more accurate reading. I’m also thinking of going with a 170 thermostat. I just serviced the whole cooling system (except for replacing the thermostat) so I know I have good cooling and lots of water running through the engine. Any input is appreciated! Keenan, If it is viable, with wire extensions, it might be good to place all the senders and thermostat in a pan of water on the galley stove along with a decent kitchen thermometer and check accuracy. Also, I seem to remember a Cal 46 /Maison de Sante/ at Kona Marina, San Diego before we sailed /Marlyn/ up to Frisco. Same boat? Still there? Hi Duane, Thanks for your insight. I just noticed today that my cockpit gauge and interior gauge are two different temp ranges so I bought two new gauges today and a dual sender online. This is the Maison de Sante you’re thinking of but I have been the owner only since last December. The previous owner had her 30yrs so it didn’t feel right changing the name. Plus, I need all the good luck I can get. She was in pretty good shape when I bought her but I have since done a total re-rig and engine overhaul plus a bunch of normal things like a new water heater, fridge, and batteries. I think I’m just about done going through ever inch of the boat. Today was a new sump pump and check valves for the forward head.
